This shot was taken in Northern Argentina in a town called Tilcara. I ordered one of their local delicacies called Locro. This dish consists of a stew of potato, squash, meat, and hominy. It has a cream and slightly sweet flavor. What tops it off is its colorful burst of paprika spice and color. What made this soup so wonderful is the type of potato the locals call, "papa chola". It has a distinctly unique taste and is difficult to find outside of its home region.
I asked a local chef who specializes in South American food and apparently the closest potato you’ll find outside of the Andes is called the Yukon Potato. Looks like you’ll have to travel to the Andes to get a taste of this delicacy.
